Auto-process new products is disabled when the task targets Specific Products; use All Products or Collections instead.
Specific Products tasks have a fixed list, so there is no durable criteria set for “new products that match.”
Create (or recreate) a task with All the Products or Specific Collections if you need ongoing new-product coverage.
